Easy Sweet Treats

Sadly, Summer is coming to an end...
But your summer treats dont have to!

I feel like there is a misconception about how difficult it can be to whip up a sweet treat; every home isn't equipt with an ice cream machine and when it's hot as hell outside, next to no one wants to slave away over the stove stiring a simmering pot of custard base for ice cream - so, froyo is the way to go!

It simple, easy and you hardly ever need more than a few ingredients and 10 mins prep time to make it delicious. Perfect for dinner parties and unexpected guests - these are a handful of tried and true recipes that the kids and I just Live for. Some of them are a creamier consistency than others, and those that aren't lean more towards a sorbet; but Trust! All are yummy!

No.1
Peach Galette || 5 - 6 Ingredients
- 2 Soft Ripe Peaches
- 3 tbsps of Honey or Agave
- A squeeze of Lemon [or 1/2 a tsp]
- 1 cup of Vanilla Yogurt [of your choice - Greek works too]
*Top with Crushed Graham Cracker After Serving*
To take this up a notch: Blend in Fresh Basil or Mint

Slice (no need to peel), then freeze peaches for 4 - 5 hours. Toss them into a food processor [or blender - though I prefer the former] and pulse til it looks "crumbly" then add in the rest of the ingredients and blend til fully combined. This one should be creamy; Transfer to a freezer safe container, smooth it out a bit and either serve immediately or freeze for two hours to harden some before serving with an ice cream scoop - topping with graham cracker crumbles.

Coconut Creme || 4 - 5 Ingredients
- 4 - 6 Frozen Bananas
- Toasted Coconut Flakes
- 1/2 tsp of Vanilla Extract
- 1 can of Coconut Cream
*Top with Mint Leaves for Freshness After Serving*
To take this up a notch: Top with a Dollop of Crushed Pineapple for a Pina Colada feel

Start by refrigerating the coconut cream for a couple of hours to separate the cream from the liquid ( I always keep a can in my fridge for a simple vegan whipped cream, the flavor is out of this world good!). Toss the bananas, extract, flakes and hardened cream into a food processor [or blender - I prefer the former] and combine til just mixed, add in your preferred amount of coconut water [carefully, it's sweet stuff] left in the can to the mix and fully blend til smooth. It should still be frozen, so work as quickly as possible in order to eat right away or freeze for 2 hours before serving, topped with mint leaves.

Chocolate Peanut Butter Dream || 4 - 6 Ingredients

- 4 Frozen Bananas
- 1 tbsp of Cocoa Powder
- 3 tbsps of Peanut Butter or PB2
- 1/4 cup of Almond Milk [or "milk" of your choice]
*Top with Waffle Cone Bits and Caramel Drizzle After Serving*
To take this up a notch: Serve Affogato Style - Mmmm...

This one is creamy and simple! Just blend all ingredients with your milk [and butter] of choice and serve - or freeze for a couple of hours before serving, topped with waffle cone and caramel. If you're going for the affogato, coat the bottom of the glass with caramel and garnish the top with waffle cone. You can always add more drizzle on top as well if it suits you; just be sure to garnish with the cone after both froyo and espresso (or coffee) has been served in the glass otherwise it will be soggy.

Mango Madness || 2 - 3

- 3 cups of Mango
- 1 can of Coconut Milk
*Top with Crushed Pistachios for a bit of bite or Mint Leaves for freshness*
To take this up a notch: Blend in about 1/4 tsp of Fresh Ginger for depth of flavor

This sorbet style treat is as easy to make as the ingredients suggest. After dicing and freezing your mango, simply throw everything into a food processor or blender [both work just as well for this one] and combine til smooth. You can substitute the coconut milk for your choice of "milk" just be sure it's about 10 - 13 oz of liquid to 3 cups of frozen Mango. Freeze for 2 hours and serve with preferred topping.

Very Very Berry || 4 - 5 Ingredients
- 2 Frozen Bananas
- 2 tbsps of Almond Milk
- 1 cup of Frozen Berries
- 1/4 tsp of Vanilla Extract
*Top with Frozen Sugared Grapes*
To take this up a notch: Mix in Lemon Zest or Blend in a Skinny Lemon Peel Twist

Also a sorbet style dessert, all you have to do here is blend everything listed [using your "milk" of choice] and serve! I don't even go through the trouble of freezing any berries for this one - if I don't have any ready to go, a bag from your local supermarket's freezer section will do just fine.
